40% of edible food in the United States gets thrown out, but small steps can make a big difference in changing this shocking number. This Earth Day, Chef José Andrés is taking the #NoFoodWasted challenge and has a yummy solution for what you can do with all your leftover bread. Watch his step by step instructions above.
Migas con Huevo Frito (Sautéed Bread with Fried Egg)
Extra-virgin olive oil
1/2 onion, very thinly sliced
2 cups thinly-sliced day old bread
Salt, to taste
To make the migas, heat 2 tablespoons of the olive oil in a large sauté pan over medium heat. Add the onion and sauté until soft and lightly browned, about 2 minutes. Add another 2 tablespoons of olive oil and the bread and sauté until the slices are golden, about 8-10 minutes. Season with salt, to taste, and place on a large serving platter.
In a medium sauté pan, heat 2 tablespoons of olive oil. Crack two eggs into the pan and fry until the yolks begin to set and the edges begin to brown. Tip the pan and spoon the oil in the pan over the eggs. Season with salt, to taste, and place on top of the migas. Repeat with the remaining 2 eggs.
